Today the media presented us with this article, claiming that eating healthy is going to cost at least $1.50 more each day than eating unhealthy. That is $550.00 a year. In various versions of the article, each gives only one example of what is considered a healthy diet and what isn’t. The unhealthy diet is processed foods, meats and refined grains. The healthy diet is “healthier meats”, fresh fruits and vegetables, nuts, grains, and fish. You can eat a healthy diet without expense meats and cheeses and regain your health for a much lower price than any of these articles present. Do not be mislead by the misinformation. You can still eat delicious and rewarding meals on a plant based diet.
When I settled into my second week of eating a plant based diet, I realized I had been ripped off by the food industry. They make you believe you are going to be missing out when you quit meat, but it is a lie. The truth is you have been missing out the entire time, at your own expense!
We think meat tastes so good but in reality it is just seasonings. Many meat dishes would make you feel sick to your stomach without any of the seasonings. There are so many resources and information available online that it will quickly become a simple and appealing task.
I decided to start with an Indian diet, because they have a large population of vegetarians and they are well known for their talents with combining spices. I bought the Silk Road Cooking: A Vegetarian Journey and started right away. We also explored some Thai recipes. It was an enriching experience. The flavors involved in these cuisines are amazing, and your house will be filled with mouthwatering aromas. They do use diary in some of the recipes but these can easily be substituted or just left out entirely.
You should never feel like you are losing anything. If you need comfort at first, you can nearly always find a vegan version on Pinterest for any of your usual favorites, no problem! Just do a search for example, “vegan macaroni and cheese“. You will find so many different recipes and variations on this traditional dish, that you are bound to find one you absolutely love. Most recipes are simple. Cooking times are a lot less and most ingredients can be eaten without cooking them at all.
Some projects are time consuming but not in a laborious way. They are simple tasks like putting beans in a pot and soaking them overnight, but even this can be modified with no soaking time to save time. Other than that boil and stir occasionally. It is far less complicated and time consuming than traditional animal based recipes. Don’t get the wrong idea, its not completely instant but it’s not as complicated as it appears.

One thing there won’t be is judgement. Even though I do consider myself a vegan now, I wasn’t always one. I do not want to shame anyone or make anyone feel left out. My only intention in writing this blog to help people get their health back in the most affordable way possible.

I have suffered with depression and anxiety for most of my life and this diet has changed my life completely. I used to struggle day to day to wake up and do anything productive. I had low self esteem. I was hostile and depressed. I didn’t enjoy life. I smoked cigarettes and drank too much when I would drink. Soda was my drink of choice (because water tasted weird) and I couldn’t sleep. Oh yeah, and add on TON of coffee and sugar. I had sleep prescriptions, anti-depressants, antibiotics (sinus infections), pain medication for back pain and sometimes anti-anxiety pills. This was a recipe for disaster.
I won’t lie, I started to learn about nutrition at first from television. I became aware that diet was much more important then I had previously thought watching You Are What You Eat: The Plan That Will Change Your Life. A nutritionist, Gillian McKeith, helps overweight participants change their very unhealthy ways by laying out everything they eat in a week and having them face the reality of it. This usually has great effect because they have to see how out of hand the situation really is. Even though I was thin, I was eating the same unhealthy foods and having the same problems as the overweight people.
It took me five more years before I really began to work on changing my diet. Sometimes it is really hard to come up with the energy to help yourself when you are feeling down. I just got sick and tired of feeling terrible all the time and decided to do something about it. You can do it too. I will help provide tools and support to help you on your way!
