- 3 large russet potatoes, cubed
- 2-4 Tbsp coconut oil
- 1/2 tsp chili powder
- 1/2 tsp paprika
- 1/4 tsp cumin
- 1/8 tsp crushed red pepper flakes
- salt & pepper
- 4 cloves garlic, chopped
Preheat oven to 450º F.
Rinse and slice potatoes.
Boil potatoes for 7 minutes, until fork tender. Drain.
Mix 2 Tbsp oil and spices in large bowl. Add potatoes and mix until they are evenly coated.
Roast potatoes for 15-20 minutes.
Chop 4 cloves garlic and mix with remaining oil, drizzle over potatoes. Cook 10 more minutes.
